Basic Recipe: Cinnamon oatmeal raisin cookies.

Last winter when I was home with David I used to make these cookies on repeat. They make for the perfect on-the-go snack. My toddler tends to run out of energy pretty quickly, especially when we are exploring the snow in a ‘’look-at-me-I-am-the-moon-baby’’ type of snowsuit. When my husband asked for them weeks ago, I figured it’s about time I make a batch (or too – #shy).

They are so delicious and darn simple to make. And when I say simple, I mean – you literally cannot go wrong with them. Even if you have no experience with baking whatsoever, you will be the Martha Steward of the house, guaranteed (well, unless you forget them in the oven that is).

I found this simple delish on Amyshealthybaking website (thanks Amy!). As usual, I cannot go without modifying a thing or two in a recipe I like, but the idea is still the same – these are super chewy, sweet and simple to make.  

INGREDIENTS

  • 1 cup oats (finely shopped)
  • ½ cup whole wheat flour
  • 1 large egg
  • ½ cup agave nectar
  • 2 tbsp organic coconut oil (or a vegetable oil of choice)
  • ½ cup raisins
  • 1 tsp baking soda
  • 1 tbsp cinnamon

DIRECTIONS

  1. Mix all ingredients in a bowl
  2. Place on baking paper (I use a spoon or ice cream scooper)
  3. Press to pan with a fork to get the ‘’flat look’’
  4. Bake for 12-15 min (until golden yellow) on 180 C .
