This is not the typical Greek moussaka with lamb meat and eggplant. No, no. This is the Balkan (much easier) version that my grandma used to make almost every week (as requested by myself) when I was a little girl. One thing I love about this moussaka recipe is that it’s incredibly versatile. Even if you do not measure ingredients precisely, it still turns out marvelously delicious. CHOOSING THE RIGHT CANNED TOMATOES
There are a lot of viewpoints on canned goods across the internet jungle. Some say do not eat canned goods, other say you are safe if you know where they come from and how they’ve been processed. Canned tomatoes are usually picked and canned at the peak of ripeness, then pealed and sealed into a can.
I tend to buy either Italian plum tomatoes or diced can tomatoes. A general rule when choosing the brand is looking at their Ingredients list: as long as it says 100% tomatoes (no sugar, no calcium chloride or other complicated to pronounce ingredients). One simple rule I always follow when choosing canned foods: ‘The less ingredients on the label, the healthier. ‘’

Our easy Moussaka recipe does not allow for many substitutions; however there are a few to experiment around if you want. One is minced meat -> I usually cook this recipe with 100% pork meat or a mix between beef and pork (40% beef + 60% pork meat). This recipe turns wonderfully with lamb (minced) or even 100% beef (minced). Another possible substitution, I’ve tried is adding fresh (spring) onion or purple onion instead of traditional yellow onions.

Easy Moussaka Recipe (Balkan Style)
- 4 large yellow potatoes, around 500g -750g
- 1 large onion head, diced
- 2 medium carrots, peeled and minced
- 1 can 14 ounce/ 400 g chopped tomatoes (or fresh), preferably organic
- 500 g (half a kilo) minced meat
- 2 tbsp thyme leaves, fresh or dried
- 2 tbsp olive oil, extra virgin
- Water as needed
- 2 tbsp Summer savory spice, optional
- 1 vegetable bouillon cube, organic
- 3 large eggs
- 300 g Greek Yogurt, plain
- 2 tbsp whole wheat flour
- Salt and pepper to taste
- 2 tbsp minced parsley leaves, optional
- Wash, peel and dice potatoes in small cubes. Place in casserole pan (best if non-stick like this one on Amazon) and add (minced) tomato and bouillon cube. Add water until potatoes are just about covered with liquid and bake in preheated oven until almost cooked (around 25 min in my oven).
- In a soup pan with lid (like this one on amazon) saute in olive oil the minced meat, diced onion, carrots, thyme and savory spice (optional). Add minced meat and cook until meat changes color (almost cooked). Stir frequently to prevent meat sticking in large stacks. Add a little bit of water if needed to prevent burning.
- Combine both potatoes and minced meat and stir well. Set aside and preapre sauce.
- In a large mixing bowl add Greek Yogurt, Eggs and flour and blend until well combined (I use egg whisk or fork). Pour over potatoes and minced meat and bake in the oven until golden (around 20 min in my oven).
- Sprinkle with diced parsley leaves (optional) and serve with cold Greek Yogurt.
